- 2 eggs
- 1-1/2 cups orange juice,
or milk
- 2 cups flour
- 1 tsp baking powder
- Dash of salt
- 1/4 to 1/2 cup sugar de
pending on taste
- 3 medium apples,
peeled and grated
oil for frying

LATKES
Mix eggs with juice/milk in a
bowl. In a separate bowl combine
the dry ingredients - flour,
baking powder, salt and sugar.
Add to the egg mixture along
with the grated apples.
Heat a thin layer of oil in a skillet.
Drop a large spoonfull of batter
into the hot oil.
Cook about 2 minutes on each
side, or until slightly golden.
Makes approximately 36 latkes.
Drain on paper towels, sprinkle
with confection sugar, serve, &
