Did you ever walk into a wedding hall and smell that aroma of delicious
stew meat and your mouth just starts watering? Did you ever wonder how
they make this yummy recipe? Well, here’s your chance to try out this easy
recipe that only seems difficult when you’re tasting it from the buffet!
Veal/Beef Stew

1 ½ pounds veal or beef stew meat
2 onions
1 cup tomato paste
1 cup sweet wine
3 cups boiled water
3 flat tbs. beef stock
2 carrots sliced (or baby carrots)
1 small sweet potato
3 potatoes (optional)
1 large zucchini (optional)
Place a little oil in a non stick deep sauce pan or pot and sauté only a few cubes of meat at a time, periodically
tossing them onto different sides of the pan. We don’t want to let the meat sit in its own juice, as that
will cause it to get hard. What we are aiming to do is to seal in the meat’s own juice.
Sauté until the outside of the cubes turn whitish in color, then remove. Repeat with the rest of the meat,
however it’s not necessary to add more oil, since the meat will give off enough of its own juice.
Once all the meat is done, slice up onions and sauté them in leftover meat juice. Add tomato paste, wine
and beef stock mixed with boiled water,the stew meat and onions. Cut up all of your desired vegetables
into cubes and add them to the pot as well. Cover pot and place in the oven for 2 hours to bake, or leave
it on the stove to cook.
Tips:
• I like to make it with (white) potatoes
and serve it as a dish on its
own, but sometimes I’ll leave out
the potatoes and serve it with
rice or any pasta.
• If using zucchini, add them in
just 20 minutes before the end
If you live outside Lakewood and want to see what’s going on inside
of cooking time - this way they
won’t get too mushy.
• If you want to make a lot at
once, store in freezer in separate
portions, and defrost before
heating up.
• Best served piping hot!
